1 cup yellow corn meal
1 cup plain flour
1 tsp salt
3 tsp baking powder
1 ½ cups milk
1 egg
1 tbsp butter
1 tbsp bacon dripping

Preheat oven to 450 degrees.  Melt butter and bacon drippings in the skillet that you will use to cook the cornbread.  Be sure the skillet is good and hot.  Pour off the excess butter and drippings into a mixing bowl.  Add all the other ingredients.  Mix thoroughly and pour into the hot skillet.  Bake for 20 minutes.

2 pounds ground beef
1 large onion chopped
2 teaspoons minced garlic
1 green pepper, chopped
1 large can diced tomatoes
1 large can tomato juice
2 teaspoons salt
¼ teaspoon sugar
4 teaspoons chili powder


Bean Queen Pinto Beans, cooked Brown ground beef, onion, garlic and green pepper.

Add remaining ingredients.
Heat until starts boiling, reduce heat to simmer. Simmer for 2 hours.
If you add the beans, you will need to add chili powder, salt and pepper to taste.
Serve over rice, cornbread, tamales or corn chips. Serves 12

TEXAS CAVIAR 1 c. black-eyed peas, drained 1 can white hominy 2 med. tomatoes, seeded & chopped 4 green onions, very thinly sliced 2 garlic cloves, minced 1 med. green pepper, finely chopped 1/2 c. chopped onion 1/4-1/2 c. chopped fresh cilantro 1 c. picante’ sauce

Combine all ingredients; mix lightly. Cover; chill at least 2 hours or up to 24 hours, stirring occasionally. Drain. Makes 7 cups.

The Bean Queen’s Royal Bean Mixes are our best comfort foods

White Bean Soup Mix, Pintos, Black Eyed Peas, Navy Beans, Big Limas, and the Bean Medley Mix all are old family recipes. 

Beans were a staple in the Queen's home when she was growing up, so it was natural that she would continue the tradition.  Her father's, and by coincidence her father in law's favorite bean was the Large Lima, better known in this family as Big Limas.  As the Bean Queen's children grew up and left home, their families and jobs took them far away from home.  They began calling home and asking for bean mixes to be sent, and that is how it all began.  Having some children in the military, these beans have been shipped to several states and countries around the world. 

Our bean mixes are great for cooks that also work outside of the home.  All you need to do is to combine the mix with water and meat if you like in the crock pot.  Let the beans cook while you are away.  Serve over rice or cornbread or as a side dish.

White Bean Soup Mix is a mixture of Great Northern beans with just the right combination of spices, onion and parsley. You will need to add parmesan cheese, water and a hambone. Shrimp are delicious in place of the hambone. These would be added later, not to be cooked the entire time that the beans are cooking. This is a great dish to warm you through and through on a cold winter night. During Lent, if you are Catholic, the white bean soup with shrimp is a great Friday meal. Black Eyed Pea Mix is seasoned just right for a great flavor. The Queen’s husband, “Mr. Bean” as he prefers to be called, says that once a year, on New Year’s Day he eats enough to last a year, but he gets them more often than that—they are lucky all year at the Bean Castle.

The peas are great with a meal, in “Texas Caviar”, a popular dip recipe, or in a New Years stew. Just add cabbage, ham and broth if you want it thinner.

Navy Beans are probably not as familiar as some of the others, but they are no less delicious. The Bean Queen and her family enjoy these beans, also sometimes called “Small White Beans”, as a side dish or served over rice or cornbread as a main dish.

Navy Beans are good with sausage also—either chopped link sausage or browned patty sausage. For those of you that are not familiar with this great little bean, these are the beans used in canned “pork and beans”.

If you have Navy Beans left over, you can use them to make baked beans by adding brown sugar, catsup, barbeque sauce, mustard, salsa, onion, bell pepper—sweep the kitchen. Use whatever you like, to your taste. The Bean Queen likes to add just a dash of cinnamon and nutmeg. If you want a Mexican flair, add chili powder.

For an Italian taste, add oregano and basil. Be creative. As with all of the Bean Queen products, the possibilities are endless.

The Bean Queen Pinto mix is a favorite of everyone. These beans when cooked to perfection make thick, brown gravy. You may add sausage and serve over rice for “Red Beans and Rice”. This is good with sliced link sausage or browned patty sausage. Pintos are good over cornbread also. Mr. Bean likes Pintos and all of his beans with fresh onion chopped and sprinkled on top.

Pintos can be cooked down and mashed to make “Refried Beans”, a compliment to your favorite Mexican dish. Speaking of Mexican dishes, Pintos served over Tamales with Pepper Jack cheese sprinkled on top are downright sinful.

To make your favorite “Chili” recipe even better, add a full cooking of “Bean Queen Pintos”. You may need to adjust the amount of Chili powder. You will need more for the beans. This also stretches your Chili—makes it go further. The Bean Queen’s mother, (I guess she would be “Grandma Bean”) served her Chili and beans over rice. She really stretched that pound of hamburger meat. If you don’t have a good Chili recipe, we have shared the Bean Queen’s.

Bean Medley Soup Mix is made up of a mixture of Baby Limas, Black Eyed Peas, Great Northern Beans, Big Limas, Navy Beans, and Pintos with the usual spices. To the package of the mix you will add canned tomatoes and beer. If you are offended by the beer, you may add more tomatoes or another vegetable or broth. Later add whatever meat you like—venison, beef, chicken, sausage (link or bulk), shrimp.

Bean Medley Soup is not only delicious; it is a beautiful addition to your meal. The different beans and vegetables are colorful and interesting. If you are watching your weight, you might want to just eat the soup as is, but it is really good over cornbread or rice.

We have saved the biggest and best for last.
"Large Lima" Beans have a very special place in the Bean Queen family. “Big Limas”, as they were called by Mr. Bean’s father, were really given the royal treatment. They were not only served as an every day bean. They were an important part of holiday meals. “Big Limas” were served right along side the turkey, ham, dressing and ambrosia. Some people say “Lima Beans” like it leaves a bad taste in their mouth. Lima Beans really have gotten a bad rap. These people have obviously never eaten “Bean Queen Big Limas”. This mix, as with all the others has all the special spices. The secret to cooking good Lima Beans is to not overcook them. You want the beans to still have their form. Don’t cook them down to mush. Add cubed ham to Big Limas and serve as a main dish or just beans as a side. Most of all, if you think you don’t like Lima Beans, please give them another chance, and try the “Bean Queen’s Big Limas”.
